Be honest about what kind of buffet it is

This is the decision that gets the numbers right. Drinks and nibbles after a christening is a very different quantity from a wedding buffet that is standing in for dinner. If the invitation implies a meal, guests will arrive expecting one.

Variety beats volume

Eight modest dishes look far more generous than four large ones, and people eat about the same. It is the first two or three things on the table that get eaten most, so put the cheapest items there and keep the expensive platters further along.

Long events need topping up

Add roughly 10% if it runs past three hours, but hold that back and refill the table rather than putting everything out at the start. Cold food should not be out for more than four hours, so the second half stays in the fridge until it is needed.

Dietary needs

Assume at least one guest in ten needs a vegetarian option and label anything containing nuts, gluten or shellfish. Keep those dishes at their own end of the table with their own serving spoons.

How much food do I need per person for a buffet?

Does a buffet replace a full meal?

It depends on the time of day and how substantial the dishes are. A lunchtime or evening buffet with hot dishes, bread and a dessert can stand in for a full meal; a mid-afternoon spread of nibbles usually cannot and guests will expect a proper meal either side of it.

Should I buy extra food for a buffet?

Yes, buy a little more than the calculated total. Buffets are harder to portion precisely than a plated meal, and a table that looks generous encourages people to relax rather than hold back.

How do children change buffet numbers?

Children typically eat around half an adult portion at a buffet and gravitate towards a narrow range of dishes, so it is worth including a few simple, plain items alongside anything more adventurous.
