How you may use this site, and the limits of the guidance it gives.

Food safety disclaimer

Cooking times, temperatures, portion sizes and storage times on this site are guides, not guarantees. Ovens, appliances, joints, packaging and starting temperatures all vary. You must check that food is cooked properly before serving it: steaming hot throughout, juices running clear on poultry and pork, and no pink meat. Where a core temperature applies, the middle should reach 70°C for two minutes, or an equivalent combination such as 75°C for 30 seconds.

Storage and reheating figures assume a fridge running below 5°C and food cooled quickly after cooking. If you are in any doubt about whether food is safe, do not eat it.

Nothing here is medical or professional food-hygiene advice. If you cook commercially, your own food-safety management system takes precedence over anything on this site. Our method and sources are published in full.

You may use these calculators freely for your own cooking, at home or at work. You may quote a figure with a link back to the page it came from. You may not copy the site wholesale, scrape it in bulk, or republish its data as your own calculator.

To the extent permitted by law we accept no liability for loss or damage arising from use of the site, including spoiled food or a late dinner. Nothing in these terms limits liability that cannot lawfully be limited.
