Why fan ovens are set lower

A fan circulates hot air, so food cooks faster at the same dial setting. Recipes allow for this by asking you to set a fan oven about 20°C lower than a conventional one.

Gas marks

Gas marks step in even amounts of about 14°C. Gas 4 is 180°C, the setting most cakes and roasts use.
