- So the times on this page are quality windows, not safety deadlines. Something a month past its window is not dangerous, it is just not as nice.

Quality window, not a safety deadline
At −18°C or colder, food stays safe to eat indefinitely, bacteria cannot multiply at that temperature. What deteriorates is quality: texture, colour and flavour, and fats slowly turning rancid. So a bag of mince a month past its window is not dangerous, it simply will not taste as good.
Freezer burn and how to avoid it
Those grey, dry patches are moisture that has escaped the surface of the food. Wrap tightly, push the air out of bags, and use containers that suit the quantity. Label everything with what it is and the date, a mystery frozen block is a wasted one.
Cooked rice needs care
Cooked rice can carry spores that survive cooking and multiply as it cools. Cool it within an hour, freeze it the same day, reheat it straight from frozen until piping hot, and only reheat it once.
Refreezing
Do not refreeze food that has thawed, unless you cook it first, then the cooked dish can go back in. Raw chicken defrosted on Friday and refrozen on Saturday is exactly the kind of thing that causes trouble.

Questions about freezer storage times
Is it unsafe to eat food kept in the freezer longer than the recommended time?
No, food kept at -18°C stays safe indefinitely. The months given for each food are a best-quality window, not a safety limit; the food simply loses flavour and texture the longer it sits.
Why do freezer times differ so much between foods?
Fattier and more delicate foods lose quality fastest in the freezer. Oily fish and cured meats such as bacon have a shorter quality window than plain cuts, because their fats turn rancid sooner.
How should I defrost food that has come out of the freezer?
That depends on the food. Check the entry above, which tells you whether it needs the fridge, can be cooked from frozen, or can safely come back to room temperature. Defrost in the fridge, not on the worktop, whenever fridge defrosting is called for.

Can I freeze food again after I have cooked it from frozen?
Yes, once food that was frozen has been properly cooked, it can be cooled and frozen again as a new cooked dish. Never refreeze food that has only been defrosted and not cooked.
