Different vegetables, different times
Beetroot takes three times as long as courgette. Putting them in together is why mixed trays end up half burnt and half raw. Add the quicker ones later instead.

Crowded vegetables steam. Use a big tray, a single layer and a hot oven, and turn them once halfway.

Why do my roast vegetables come out soggy instead of caramelised?
This usually means the tray is too crowded, so the vegetables steam in their own moisture rather than browning. Spread them in a single layer with space between pieces, and use a large tray or two smaller ones rather than one packed tin.
Can I roast different vegetables together on one tray?
Yes, but only if you stagger when each one goes in, since roasting times vary enormously, beetroot can take three times as long as courgette. Add the quicker-cooking vegetables to the tray part way through rather than all at once.
How many vegetables should I cook per person?
Portion sizes vary by vegetable and by how many other dishes are on the plate, so use a dedicated calculator for the right raw weight.
Should I toss vegetables in oil before or after they go on the tray?
Toss them in a bowl first so every piece is evenly coated, then spread them out on the tray. Pouring oil over vegetables already on the tray tends to leave some pieces dry and others swimming.
